BARAKO - THE WILD BOAR

Part of what separates us from other coffee brands is that we offer a new type of bean rarely seen in your local shop and almost definitely not sold in your mega-brand chain. It’s called Barako. Translated it means “wild boar.” This bean is not to be trifled with! It is a big, hearty brew that will make your tastebuds punch back and your toes curl with every sip. There are only 2 places in the world where this bean is grown. One is in Vietnam where production is very small. The other is in the Philippines and is cultivated in Lipa, Batangas - about 50 miles outside of Manilla. The Barako bean is larger (huge really), more complex and has more caffeine than other beans.

OUR NAME

A ballast is meant to give balance to something that is otherwise unstable. Growing up in the Philippines, Paolo’s weekend trips out to their family's beach house during the Amihan season would bring him a similar sense of balance and tranquility to an otherwise chaotic world. “Swim a hundred yards offshore and just float,” he said. Let the stress, confusion and pressure of the everyday float away as well. It provided him the balance essential to a life worth living. Today, with Ballast, he offers you that same solace found floating a hundred yards offshore. Re-balance your morning, afternoon or evening with a cup of Ballast Coffee.

OUR FOUNDER

This is our founder - Paolo. He grew up in both Manila and San Francisco. He has been in the coffee business for over 10 years now and has a uniquely strict eye for structure and quality that commands the best for his customers. His vision is to bring a new experience in coffee and is the foundation of our company.
